Carbón de La Lucha

Carbón was born in July 2024 as a pop-up from La Lucha Sanguchería in the Plaza San Miguel mall, with the grill and the embers at its core, according to El Comercio's Provecho. The menu, created by Diego Aguirre, is American-style with Peruvian ingredients: the double burger with Andean cheese and cheddar, the dirty fries with charcoal-grilled short rib and native potatoes, and a hot ice cream with grilled chicha as dessert. Our take: it is La Lucha in grilled fast-food mode, smokier and heartier than the parent sandwich shop, and works as an informal stop inside the mall. It opens daily for lunch and dinner, and delivery goes only through PedidosYa, according to its Instagram. Curation note: it began as a temporary format; Google shows it operating on Blvd. Plaza Mantaro, while the opening article placed it in Plaza La Carta.
