Bijou Bar

Bijou opened in October 2022 in an inner unit on Calle Alcanfores, with almost no signage —hence the «hidden jewel» tag. Juan Carlos Ramírez and Juanita La Riba set it up, and the bar is run by John Rojas, formerly of Barra 55, whom Summum 2025 named the country's Best Bartender. The list starts with classics —the three-vermouth Bijou, the Martini, the Negroni— and opens into house creations built on Peruvian spirits: matacuy in the Bijou Andino, rum in the Aventurero. Our read: there are about twenty-five seats, so book; and ask before you order, because the point here is having the drink explained to you. Closed Sundays and Mondays.
