All-day dining con fermentos y técnica japonesa en la calle Dasso · san isidro · $$$
Lila Dasso
Why we recommend it
It is at C. Miguel Dasso 125 in San Isidro, with a front terrace, a room with an open kitchen and a back patio seating about fifty. It opened in October 2021 under chef Diego Gutiérrez — an Arequipeño who passed through Noma's fermentation lab, IK in Lima, and Boragó, Azurmendi and El Celler de Can Roca — with the bar led by Colombian Lizeth Díaz, who has worked with Rafael Osterling and Pedro Miguel Schiaffino. The house describes the menu as simple in form and complex in substance: koji, amazake and miso crossed with Peruvian produce, in dishes like the grilled cheese on hokkaido bread with tilsit, the schnitzel with Japanese fermented cucumber, the prosciutto-and-mushroom pithivier and the kouign amann with saffron kombucha. Our read: serving three distinct menus — breakfast, lunch and dinner — is what really defines it, because it forces a kitchen that turns over all day and explains why Google flags it at once for good coffee, cocktails and desserts. The practicalities: it opens Monday to Friday from 8 in the morning until 10:30 at night, Saturdays from 9 and Sundays until 8; it accepts reservations, and there is only street parking, which Google marks as hard. The entry records a 2026 Premios Somos nomination for Best Café. Curation note: the Google listing is unclaimed and publishes no website; the directory entry carried no address. Google marks the space and toilets as accessible but not the entrance, so the accessibility attribute was not loaded.
