Opened in 2022 by Hans and Angie Gallardo, the family behind the Lince classic El Merlín de Cabo Blanco, this Santa Cruz cevichería exists to do what the older room could not: seafood with contemporary technique. The menu centres on fish — ceviche, tiradito in smoked ají amarillo tiger’s milk, octopus — alongside dishes outside the cevichería mould, such as green tamal and anticuchos. Closed Mondays, with midday and evening services.
