República del Pisco

República del Pisco occupies an old house at Calle Bolívar 215, a few blocks from Parque Kennedy, and is one of the brand's two Lima locations (the other is in Barranco, with a third in Cusco). The house describes itself as a space inspired by Peruvian culture, with live music, a wide range of signature pisco-based cocktails, dishes and small plates. Our take: it is more a bar with a show than a restaurant; go for the pisco and the nighttime atmosphere, with the food as something to share in a group. It opens at noon and closes at 1:00 Monday to Wednesday, at 2:00 on Thursdays and at 3:00 on Fridays and Saturdays; Google recommends booking, and the house takes reservations on its website (by phone for groups of more than 10). Curation note: Google shows a 12:00 opening on Sundays, while the official website says 12:30; we used the website's hours.
