Why we recommend it
Sapiens is Jaime Pesaque's fire-cooking project — the same chef behind Mayta — in San Isidro, on Pardo y Aliaga. In 2025 it placed 18th at Summum. The idea is for nearly everything to pass through embers and open flame: octopus, cauliflower, guanciale anticucho, lomo al trapo, smoked vegetables, on an author's menu built for sharing. The space has a rustic-contemporary design, low light and music, with a mood closer to a night out than a formal meal; the smell of embers hits as you walk in. It opens daily, lunch and dinner. It makes sense when you want well-worked ember cooking in a considered setting, as a couple or a small group, without Mayta's tasting format but with the same kitchen signature behind it.
