Boycott — Surco

Boycott is a two-branch burger house — Miraflores and Surco — that treats eating well as a joke: its menu is titled "Manual de Dieta" and the skull in the logo has a burger between its teeth. The base is always Black Angus beef, and from there the list splits three ways. The OGs are the standards: Classic, Cheese and Bacon Cheese with Outlaw sauce. The Places are named after cities and each one builds its own idea — Guadalajara Hot Springs with guacamole, jalapeños and tortilla chips; Vail Sour Ham with jamón serrano and Golden sauce; Wisconsin Fire with Peruvian tartare sauce; Oklahoma Caramel with caramelised onion and Bandit sauce; Kyoto Sweet Shoyu with tempura leek; Osaka Super Cheese with a cheese crust and spicy mayo; New Jersey with mushrooms caramelised in maple syrup and roasted-garlic butter. The Prime line raises the stakes with extra-crunchy onion, crisp egg or truffle mayo. The Surco branch is on La Encalada and opens at a quarter past seven in the morning.
