El Paisa sits in the Santa Inés neighbourhood and works like a classic Trujillo tourist restaurant: a large dining room, a long seafood menu — cebiches, tiraditos, chicharrones, seafood rice, parihuela — and neighbourhood prices. It opens at a quarter past nine in the morning and closes at five in the afternoon, seven days a week. In 2025 it turned twenty-five and was nominated at Summum for Best Restaurant in La Libertad.
