Maido

Maido is Mitsuharu "Micha" Tsumura's kitchen, where nikkei stopped being fusion and became a category of its own. In June 2025 it was named the world's best restaurant by The World's 50 Best, climbing from fifth the year before. The tasting menu crosses Japanese technique with Peruvian product: the asado de tira that turns tender after hours of cooking, nigiri seared tableside, the ceviche temaki. It occupies a Miraflores corner with few covers per service, so reservations get planned weeks ahead. It makes sense when you want Peruvian fine dining at its most ambitious and can give it the whole evening. Not a place to improvise.
