Doomo Saltado

Doomo started from one obsession —lomo saltado— and stretched it as far as it would go: the classic rump version, layered between two beds of rice, under ají de gallina cream, with green noodles, with huancaína. Around it sits a nikkei and Japanese menu (ramen, maki, kimchi chaufa, torikatsu), a grill section and vegan options with Beyond Meat. Summum's jury named it Best Lomo Saltado in 2024.
