Elevaria Café y Tostaduría
Why we recommend it
It sits at Avenida Larco 385 in Trujillo and is Elevaria's flagship. It was founded by Wendy del Águila, an engineer from Trujillo, who started the project in 2020 and opened the first location on Avenida Fátima in 2022. It roasts its own coffee — working beans from the Otuzco project, in the highlands of La Libertad — and runs with an all-women team, two traits the house states as part of its identity. In 2025 it entered The South America's 100 Best Coffee Shops at number 90. Our take: in a city where specialty coffee is only just settling in, Elevaria was the one that roasted first and the one that sustains a filter menu alongside espresso, so it serves both the person who comes to work and the person who comes to taste. Practicalities: open seven days from 8 a.m. to 10 p.m., with a second location at Avenida Fátima 285, Monday to Saturday until 9 p.m.
