Bosque Guardian Lodge

Callampa is the kitchen of Bosque Guardián, a bamboo-cabin lodge in the high jungle less than an hour from Tarapoto, inside the Cordillera Escalera regional conservation area. It is run by Gregorio Labán, a Piura-born chef trained in Lima with years of work in Italy, who moved to the Amazon and built a kitchen he defines by listening rather than transforming: local fruits, seeds, roots and aromatic plants, served as a three-course menu that shifts with what is available. Much of the produce comes from the house's organic garden and the surrounding forest — umarí and zapote in season — and the rest is bought from local farmers and communities. Since 2018 the lodge has belonged to the Bosque Guardián association, which protects 149 hectares and reforests the Tiraco valley. In 2026 it was nominated for best restaurant of the Amazon region at the Premios Somos.
