Why we recommend it
Bruto opened in 2025 and is the other face of Arlette Eulert. If Matria is the fine cooking, here she wanted the opposite: "people should feel they're eating at my house, only lighter". The menu is criollo without ornament — tongue vinaigrette, pig's trotter with peanut sauce, battered silverside, ají de gallina, seco a la limeña, lomo saltado a lo pobre, a Bruto pork knuckle built for sharing — and for dessert, suspiro limeño or flan. It grew out of Brutal, the dark kitchen Eulert ran during the pandemic on the same straightforward premise. The place is underground, in a basement on Alcanfores behind a metal door, all exposed concrete, wood and honest materials; on Sundays it opens early and serves breakfast. In 2026 it was nominated for best taberna at the Premios Somos.
