Chalana

Chalana is the fish restaurant at Hotel Paracas, and its charm is the setting: it is built out on the hotel's private pier inside Paracas Bay, tables in the open air and the water underneath. The house frames it as sustainable seafood — the bay's fishermen deliver straight to the kitchen — and the menu turns on the fish and shellfish of the day. It opens Thursday to Sunday only, eleven to five, so this is lunch, not dinner. Our read: ask for a table facing the water and go early — the midday bay light is part of the plan — and if you are travelling over a long weekend, remember it stays closed Monday to Wednesday.
