Why we recommend it
Gabriel Garhy Nogueira Paz trained at the Escuela Iberoamericana in Lima, returned to Iquitos in 2012 and in 2013 opened Chef Paz on Jirón Putumayo, a couple of blocks from the riverfront. The idea has been the same from the start: contemporary Amazonian cooking, with technique and regional produce — tucupí is his banner, and it won him the Perú Mucho Gusto Innovation Award in 2023. It opens at midday and again from seven to eleven, with Sunday running straight through to four. Our read: it is one of the few places in Iquitos working the Amazonian pantry in restaurant format rather than as a picantería, and it takes bookings through its own site. Nominated for Summum as Restaurant of the Amazon in 2024 and 2025.
