Behind Costumbres Argentinas is a married couple — she from Lima, he from Córdoba — who came back from Argentina with the idea of doing grills to order. Out of that came Las Pipas de Surco in 1997, which they ran for eleven years, and then this house on República de Panamá, by now with their children in the kitchen. The butcher's counter is the heart of the menu: ribeye, sirloin and rump from Ciudad del Lago, short rib, vacío, skirt and sweetbread from Certified Angus Beef, with house chimichurri and olive sauce, and fixed promotion days by cut. It opens Monday to Saturday until eleven at night and Sundays only until half past five. Our read: this is a family grill for long lunches, with a private dining room, wifi and a wine list Google singles out; at nearly three thousand reviews and 4.5, booking at weekends helps.
