Why we recommend it
Koi is not just another maki bar. Luis Romero Bellido grew up on northern Peruvian flavours, trained in Lima and cooked in the United States, Chile and Panama before returning to Trujillo; he opened Koi in 2013 with his brother Marco and has held to one idea since: nikkei built on local produce and local suppliers, with menus rotating by season to follow what is available. Maki rolls are the draw — huancalomo and acevichado turn up on most tables — alongside sashimi, tiraditos and a bar that takes its drinks seriously. There are two rooms in the city, California and La Merced, and both open only in the evening.
