La Mar

La Mar is Gastón Acurio's cebichería in Miraflores and the table that best distills contemporary Lima ceviche. In 2025 it placed second in the Summum general ranking and won the Ceviche, Fish and Seafood category; it also sits at No.26 on Latin America's 50 Best. It runs lunch hours only and takes no table reservations, so the queue is part of the ritual — arrive early or sit at the counter, where you can watch the fish worked live. The fish is fresh and the acidity clean; the fried dishes come out light. This is high-level Peruvian seafood in an accessible, daytime format, ideal for a long weekend lunch. Not a night plan: it closes early.
