Vaivento

Vaivén opened in January 2026 inside The Legend Paracas Resort, on Paracas bay, with Renzo Miñán in the kitchen — the chef behind Almacén, Cumpa and Candelo in Lima. The whole proposition is built around the daily catch brought in by the area's artisanal fishermen, so the menu shifts with the season and the state of the sea. It runs two personalities in one day: at midday the register is marine, with cebiches and cold plates; at night the wood-fired oven takes over for pizzas, anticuchos and meat. The restaurant holds the Sernanp 'Aliado de la conservación' certification for its work with sustainable fishing in the Paracas National Reserve.
